I'm not yet familiar w/ GarageBand so I cannot answer to the last query
(though it sounds like a driver issue *or* file format incompatibility).
As for item 1, you'll need a USB interface/controller of sorts.
An excellent example that is easy on the pocket would be a Tascam US 224 or
its big brother, the 448. USB connection, OS X native, and bundled w/
Steinberg's Qbase to start with. Devices such as these usually have 4-8
channels of balanced and line-level input, 2 - 4 MIDI I/O, and MIDI
programmable to provide you a tactile surface for controller operation.
Just a suggestion.
