The G3/1GHz would be faster than the G4/500, even in Altivec enhanced apps, so IMHO go for the G3/1Ghz. On the other hand, the G4/500 is tested and guaranteed to run @ 600MHz by OWC: http://eshop.macsales.com/Catalog_Item.cfm?ID=6688&Item=OWCZG4500B600
Just as a matter of interest, does anyone have A raw MFlop readout for the fast G3s? A G4/500 manages 1.65 GFlops on average, while a G4/800 manages 2.2GFlops even with only 256k cache.
Results based on my G4/500 B&W and G4/800 iMac.
I'm curious as to what a fast G3 can turn in in raw floating point operations as this is usually the key to what makes Altivec stuff so fast - Altivec is essentially a hyper-FPU.
