Is there a program that delivers good temperature data for
CPU's? I want this for my ATX/G3 366.

Which os?

In 9 the only one I know is th g3/g4 Cache Profiler by Powerlogix. CPU temps is
displayed on the first page when you run the utility which is placed in the
apple menu.

In X (Jaguar and Panther,) I use MenuMeters which delivers all kinds of useful
and configurable system information in real time in the menu (wonderful and
free.) CPU temp can be seen by placing the pointer on the cpu % item.

There's also a program in X that can graph cpu temps across time, but I forget
what it is called. Seemed like overkill for the purpose.
