Those AIO's suffer from the same hit and miss funkiness of the beige 
G3's.
I don't know why the hard drive seems to make a difference.
Try using Xpostfacto to install your updates.

happening. I also have a G3AIO and had no problem (even got Panther
installed...thank you X-post-Facto!). But I didn't change the HD 
(still got
the stock Maxtor inside).
