USB wasn't supported on the Mac until 10.3.4
It seems to me like your setup should work fine, although you may need to plug the dock into the power adapter.

Hi all,
I am getting a 4G 20GB iPod for Christmas. I have a Beige G3/500 tower, 768 Mb
RAM, running 10.3.6. I have a USB 2.0 PCI card, but no firewire. Will I be
able to use the iPod/itunes or do I have to add a firewire PCI card? I know
that for the Windoze users, the requirements are a USB 2.0 -or- a Firewire
port, but it's not clear whether or not my current setup would work. Does
anyone out there know if an iPod on a Beige G3 without firewire will work ok
with itunes??

It requires a "High Power" USB 2.0. I don't know what that is but my daughter's G3 with a USB 2.0 card didn't work.
