Past 1GB you won't seem much improvement.
The best way, at least in my use, is to use this tool/program for OS X called 'Do I Need More Memory?" (Or DINMM)

I agree with the person below. I had 320, but I just replaced my single 64MB chip with a 256MB chip and it is wonderful! I used to launch every single program in my dock to see how much memory DINMM said I needed (as much as 150MB) but in everyday use I still needed at least 64MB more memory. Now, I can launch more applications then I had before, even so as far as to do more then every one in my dock, and it only says I need 6MB :)
Everyday use? None.

I used to have a iMac just like that, with 320 RAM it ran OS X 2.8 Real
good. But since I saw it ran real good I went on and upped the ram to 512
and oh boy was I a happy camper!! Golly now I'm at the point where I'm a RAM
junkie, If I get a PC I gotta upgrade it to the MAX because it is BLISS with
more RAM.. The more the merrier.
I never will go back to 128 RAM nor 256!
IT IS WORTH THE UPGRADE Trust me ;o)
