ZAP the PRAM. Video settings are held there.
That kinda worked, but not allowing me to start up from the Internal harddrive, only the iBook as FW target disk. ---
If that doesn't do it you'll need a different VGA adapter, one without such a high resolution.
Ah, I have an old VGA adapter where one sets switches for the resolution, however I'm not sure how many DVI->VGA adapters I have... :o/
