I think it is not lost on Apple that people would want S-video output. Right on the Mac mini's main page, you will find the following text: "Show off your latest pictures, movies and music on your kitchen TV with the S-Video/composite video adapter." That text is accompanied by a link to http://www.apple.com/macmini/graphics.html, which contains the following text: "The optional Composite/S-Video Video adapter lets you use a TV for graphical output." I expect that the adapter's S-video quality will be similar to that from a PowerBook, because the mini's main video output is DVI, not VGA, that is "digital, not analog."
