And I would *really* love to be able to buy a Mini without any memory.
Then I could get a 1GB stick for a more reasonable price without having
to throw away their 256MB. All my other Macs are too old to use Mini
memory and I'm not sure it'll work on my PC's 865PE motherboard.

I'm wondering the same about my PC - it has an Asus A7N8X Deluxe motherboard. I currently have one 512 Meg stick of PC2700 Ram in it, with two open slots, and although I know it can use PC3200 Ram I'm not sure if mixing types and sizes will get me any benefit. 256 Megs of additional Ram won't do me much good if it slows the system or makes it unstable.

Still after looking at what it would cost to get my beige G3/266 DT in
shape to run OS X, I may become a Mini customer.

Been there. If I hadn't gotten the Mini for my birthday I'd still be saving up for a newer Mac (I hadn't decided yet whether to go for a Mini or a used G4). I like the Mini, but the only upgrades left that can be done to it are to switch the DVD Rom for a DVD burner and install wireless/bluetooth. And after looking at a few games I have the feeling that the 32 Meg video is going to be a doorstop in the very near future.
