I agree about the top posting (also trimming), but Apple's software
designers seem to feel differently: at least if there's some way to
make Mail place the insertion point at the *end* of a Reply instead
of at the beginning (used to be easy in OE) I haven't found it yet.

When replying to *personal* emails the current netiquette is to
top-post. This is because, presumably, the private converation is
easily tracked between you and that one recipient; you don't need the
intervening context. This was started by AOL, btw. *pl0nk* at
Apple's developers for continuing it.
When replying to *mailing list* emails, we bottom post and trim, to
maintain easy context. But since most email clients are built for
personal emails...
cmd-R to reply.
cmd-downarrow to move to the end.
You could even put that, along with a reply command, into an
automator script or quickeys or keyquencer macro...
