Why two?

Same reason everyone else who uses two monitors: double the screen real estate. I work with development software, graphics programs (like PhotoShop), and music software. Having two monitors allows me twice the visible workspace, meaning I can have, for example my work area on one screen, and tool palettes, or Mail, or whatever, visible on the other.

I'll probably never go back to a single screen system unless I can afford a 30-inch hi-res monitor.

Right now, I have Mail open on monitor 1 and Safari open to eBay on monitor 2.
