Personally, I wouldn't go with the wireless keyboard and mouse - unless your parents can take care of them. Otherwise, you'll turn yourself into a 24/7 tech support for your parents.

Definitely the larger screen, however, you want to make sure it doesn't have too high of a resolution because the higher the resolution, the smaller everything is, even if the screen is larger. You want to find a screen that's large enough but also something they have no problem looking at the words.

And definitely more RAM.

The key is - nothing too complex - anything that will take you a bit of time to do is probably too complex for them (and even something as simple as changing battery out of the keyboard). They will freak out and call you when they see the screen that said battery is slow, change now. So, they'll never get to the part where they change the battery.
