I have the same problem with VeiwSonic 17G.
Now the ViewSonic is capable of resolutions up to 1024X768, 75 Hz,
Millions.
But the Beige G3 doesn't seem to know that.
I have to trick the G3 by booting with an Apple Multiple Scan 14.
Then I yank the 14 and hook up the 17G and voila! multiple choice!
I try not to reboot too often because this is such a pain.
But it does work.
For me anyway.

I've got 640 X 480 @67hz listed as my only available resolution. Zapped
pram, reset the nvram, getting ready to reinstall Tiger. Can anyone
give me an easy way out of this dilemma?
