Chris, its a year or two since I was working with Teacher trainees here in NZ on this but there are a number of options. In order of cost, you can use Garageband 2.0 which has the ability to write music directly using the keyboard or through plugging in instruments through USB or adaptors, e.g. electric guitar / bass. You can also edit each note after writing but it is a long process in the little play I have had with it.

Band in a Box can also be used with MIDI instruments and has a huge number of preset sounds / styles to add accompaniments to your compositions.

The most creative 'open ended' music composition software is probably Sibelius which is what our Music Dept used. It is true compositional software so takes a good understanding in music theory. It does allow instant transposition to other keys etc - very powerful. Compositions can be exported as MIDI files to iTunes and burnt to CD which always pleased the students.
