It really depends,

I remember to have seen benchmarks (I think on XLR8yourmac) showing that for certain games a dual CPU machine can be slower than same a similarly clocked single processor one.

If the application is not multithreaded the second CPU is simply useless. Even worse if you run OS9. The apps that really take advantage of a second CPU are Phtoshop, Final Cut Pro, etc ... that are designed for it.

Maybe you can check some Xbench scores for a Dual 1 GHz G4 similar to yours , then check some comparable scores for a single processor machine and work backwards? Won't be perfect, but it might give you some help. Probably will mirror the previous comments.

I recently upgraded to a Dual 1.3 GHz G4 (7455) and am very happy with the results. Got a decent buy (GigaDesigns) from SmallDog.
