Same way you do on any Apache install: edit httpd.conf and restart Apache.

If it's something you need to compile in, unfortunately you need to recompile from source, and replace the existing httpd executable, but Apache's pretty complete on OS X, you should just have to edit the httpd.conf file: /private/etc/httpd/httpd.conf
