I use Entourage and it has the category colour option - never really
used Mail as I used to use Claris Emailer under OS9 and previous and really
liked it - so much that I picked the email client which most resembled it
for OSX - which apparently seems to be Entourage from the ones I've tried
though I haven't tried them all....
