I'd go for the 400 MHz machines. FireWire ports plus you can put in an airport card (I know you said you're cabling them but you might want to go wireless at some point). I'd recommend at least 256 MB each if you're going to be running
OS X.

I've had a 400 MHz iMac for almost 5 years now with no major problems (I've
replaced the hard drive and the pram battery).
