The default email application is set in Apple Mail prefs, much like the default Web Browser is set in Safari Prefs. Once the default is set to Thunderbird, iPhoto will email pictures out through T-bird. However, I've been using Mail since OS X came out and I've NEVER had the kinds of weird issues people are reporting. That said I've ALWAYS used an IMAP mail server.
