System Preferences > Keyboard & Mouse > Keyboard Shortcuts.
Everything is listed there.
You can add shortcuts directly in that prefspane. Or you can use a
tool such as OnyX to manipulate some, and change a lot of other
"hidden" (aka less documented) settings.
