Are you talking about blocking access from other non-admin users or ?

I put sensitive data in encrypted sparse disk images. That way you have to have enough permission to get to the disk image file in the first place *plus* you have to have the password to mount the thing. (Helps to NOT stash the password in Keychain, of course).
