There is no need for "loading a new operating system." Mac OS X comes with versatile multi-language capability.

Go to System Preferences --> Personal --> International, add or select your languages(s). When you are ready to input Polish, select it from the Input Menu (at upper right corner of the menu bar under the U.S. flag).
