Edit Menu for Attachments. Which option is checked?

Yes, which version of mail? I am using 2.1.3 under 10.4 and there is
an option for image size in the bottom right corner of the compose
window once you add a picture. Make sure that is set to actual size.
I took a quick look and I did not see where to set the default image
size in Mail's preferences.
The 640 x 293 is pretty close to the medium. so it may be sizing
things down to that.
