1/ If you want to install Gajim from our repository, indeed use your
second method: add ftp.gajim.org in your source list. This way you'll
have python3-nbxmpp, it's there.
2/ Now your last message is clear, Gajim need GTK3.22. Your distribution
doesn't provide it it seems. So update your GTK versino if possible,
else update your distribution or wait for a new release with GTK3.22
