There's no blocking the killing curse, and Snape said the words aloud. And if the curse didn't kill Dumbledore, the fall from the Astronomy tower surely did. He was weak from that potion and so he wasn't able to defend himself. And it's entirely possible that Albus was mistaken in his trust of Snape. But this is getting way off topic.
