Roll? Are you talking about rolling in the air? they do spin randomly in AQ, but as it's in the air and they aren't very large, you don't hear it.
The grenade launcher fires the grenade out and up, so it arcs and often bounces off of objects before it gets near its target area. Incidentally, the grenade launcher in Audio Quake sounds pretty much exactly like a real one, including the grenade leaving it and flying away.
