Fixed updateXmlElement to correctly escape things like & and < in attributes
using DocumentXmlUtils.combinedNormalisation. Without this, if you save a GATE
user configuration that includes these characters in any of its attribute
values (for example a plugin directory named "odds&ends"), the resulting file
will not be well-formed XML and GATE will not be able to load it next time.
