BBQ in North Carolina is considered a delicacy like wines are to some other people. By the taste of the BBQ you can often tell where in the state the BBQ was made. People take BBQ VERY SERIOUSLY in NC. If you had to pick the capital of "eastern NC BBQ" it would be Wilson, NC where Ed is from. However, I've learned to love both types. Eastern NC BBQ is always pork, rarely pork ribs. Usually whole hog. Usually not smoked - just cooked. You can take just the pork shoulder and cook it this way. The sauce can be held towards the end and mixed in. After it is cooked - it is either chopped or pulled and then the sauce is mixed in. I would summarize it as - good - but different. So if you are traveling down I-95 and around mid North Carolina decide that you want to stop for some BBQ - be prepared - because often they'll look at you funny if you ask for tomato based BBQ sauce.
