You can change the IP that is used for outgoing NAT with a "static address mapping" (under the NAT section of both GBAdmin and the webinterface).
Yes you can, I assumed this was only for incoming mapping. If I set it up correctly it will now map all traffic from our mailserver to appear from x.x.x.34. All other traffic should still appear from x.x.x.35.
