Too much to do, too few people. Spread around the internet are quite a
large number of ports, often by developers who've lost interest in RISC
OS. There's also various stuff in the Autobuilder that's out of date.
Some of the projects are quite small, since you're working with things
already ported and which presumably already work, and in many cases
have excellent RISC OS integration. Such was the case with the OpenTTD
update, although there was still some work involved there, since there
had been substantial upstream improvements.
Anyway, this is a list off the top of my head. By all means add your
own.

Colin hasn't responded to an email about this. I put in some
superficial stuff to build the latest XPDF, but this clearly
needs work.

Gnash. The AB version is very dated. I don't know how much
the upstream has progressed, but it still seems like it needs
a lot of work before it could reasonably used to replace the
non-free one even on x86 Linux (http://www.gnashdev.org/)
Games - all of the games in the AB built last time I went
through them, but few have been tested, and many could do with
packaging. Alan, do you have any specific comments here?

RiscPkg. Not part of riscos.info of course, but we try to make
use of it. The UI still needs an overhaul. For ideas, look at the
various solutions in Ubuntu.
