Hello-
Don't be so quick to write off the Hovabator incubators. I had mine for three 
years and it worked flawlessly. I paid about $35 US from a company called 
Randall Burkey. It paid for itself many times over and I recently sold it for 
$25. Well worth the investment. btw get he plexi top model, no fan .
I had a digital thermo/hygrometer to keep in the incubator. (about $25 at 
Radio shack) Very useful, though the cheap looking mercury thermometer that 
came with the incubator was accurate.
I've never had a Helix, tho they are well recommended. ( For the high price, 
they better work well!) 
Perhaps for your uses, a smaller investment is a better idea. 
Also, having the incubator up and at temp before you have eggs is a major 
plus.
