Jfets are not built-in. They are in a plugin, that comes in a different package. Get the "models-spice3f5" package, and there is a jfet in there. There are also jfets in "models-jspice" and "models-ngspice". They all work the same so it doesn't matter which one you get. The snapshot has a lot of new stuff that isn't in the stable version. It grew fast without the proper documentation. My highest priorities now are to make sure it all works the way it should, and bring the documentation up to date. Get ".......-models-spice3f5.... Untar in the same place where gnucap is, so it makes a directory "plugins" in the gnucap directory.
