You need to pass a parameter to the kernel otherwise it will default to something that probably isn't what you want. I haven't tried it but vga=788 might solve your problem. If you want to change the size of the vnc window you need to change the size of screen that you're simulating (e.g. pass different parameters to the kernel on boot).
