To update anyone who was following this thread.  The solution we found
that works quite well is "alfresco".  Its a content management system,
however it uses OO as its conversion engine.

I use antiword for all my doc reading & manipulating. 
 
antiword -a letter somefile.doc 
converts a doc to pdf and dumps to stdout
