The rules for how the includes/excludes work are in the Fields chapter in the 
Administrator's Guide:

The short version is it starts traversing the XML tree at the root node, and 
then starts including nodes that are "included" until it finds a node that is 
"excluded".  Then it excludes until it finds another included node, or until it 
reaches the bottom of that node.

Hi Gary !

If the database field is setup over the element having multiple children it 
will include all the element values under the root element. Elements which is 
required to be excluded needs to be explicitly mentioned under the field.

I'm guessing no but can't locate definitive documentation on this.
