Dovecot, cyrus-sasl and associated MX applications should definitely be packaged. I think packaging Postfix with support for MySQL, PostgreSQL, DB and LDAP is the lesser of 2 evils compared to maintaining multiple packages of Postfix with support for different DB's in each database. This is the way upstream (ie, Arch Linux) does it so will also result in less variation from upstream packaging efforts.
