Since the fileinstaller interprets the config file as a setting for the ConfigurationAdmin Service. So I guess you already used it :-) But do you also use the pax-logging-service? Cause that's the one actually doing the logging. If you have these running you actually should see log messages on the console, I'm unsure about a specialized log file.
