You could ask the question two ways:
- Which of these metrics are informative to have around as data
- Which of these metrics should we use to assess how we are doing from a community standpoint.

My answers to each question are different. ;)

 CVS activity

Metric for assessing community involvement:
+1 (osaf staff vs non-staff)

Although perhaps not important until we get non-staff committers.

 IRC Office Hours participation

You didn't ask about mailing list postings, which you mentioned at the beginning of the message. I'd +1 this as a useful metric for assessing community involvement.
