Normalmente con \usepackage[utf8x]{inputenc} resuelvo lo que tiene que
ver con encoding del texto, pudiendo utilizar acentos y caracteres
unicode sin problemas. Sin embargo, hay paquetes que pueden presentar
conflictos con ciertas opciones de inputenc, por lo que te recomiendo
que revises la documentación para el documentclass que estás usando.
Los mensajes que te da latex tienen más relación con babel, deberías
revisar que paquete de debian provee los hyphenations para babel.
Por lo que veo estás tratando de hacer un CV. Te recomiendo que revises
los paquetes moderncv, simplecv, y europecv...

P.D.: /me está revisando algunos códigos de revistas hechas en latex
para plantear la opción de usar LaTeX en la revista del proyecto. Todo
