I think I figured it out and managed to create another image to reproduce this
(attached as fop_broken.png). I think this is caused by the image being
color=grayscale AND having sRGB metadata (which I guess doesn't make sense and
is the reason GIMP removes it).
I reproduced this by exporting the image as grayscale in GIMP and then manually
adding the sRGB Metadata to the Image with the Windows tool TweakPNG.
