www-servers/nginx: migrate to lua-single.eclass

http_lua only supports LuaJIT but even so, use the eclass helper
functions to find it.

Only migrated SLOT=mainline because as far as I could see there are no
nginx revdeps in the tree explicitly requiring SLOT=0.
