The value of CHOST has in general absolutely no effect on the
performance of the machine. (There are a few misguided packages I've
seen upstream that try to use it to set up some basic CFLAGS, but those
packages aren't in Gentoo).

Changing the CHOST value has a large potential to break your machine if
you aren't careful, as GCC uses it as part of it's location to install
in, and sometimes stuff is linked against libraries in that location.
