Just update them. YOLO. Seriously though, most of us run Gentoo in some sort of production setting. Updating often is your best bet as it keeps the list of suspects short when things do break. OTOH I'm only about 15km from our servers when I set them on fire, so keep that in mind if yours are on another continent. If updating frequently is truly out of the question, a rolling release probably isn't the best deployment target for you.
