[gentoo-server] New webserver

I'm actually just about to roll out a new set of web servers(all gentoo 
of course) and was wondering if anyone had any opinions as to what the 
best approach, as for testing, would be? I'm wondering as the current 
systems are going running an older version of slackware. Once I have the 
boxes setup I would like to test with the current hosts, prior to going 
live with the new systems. Any thoughts? Thanks in advance.
