do you also boot windows? if you don't then you can simply leave CLOCK=UTC in /etc/rc.conf
all that this setting does is define how to translate the hardware/bios clock to system/kernel time on boot up, and vice versa on shutdown. It does NOT affect how time is displayed on the system using the unix date functions. Once the kernel clock is set on startup it functions without reference to the hardware clock.
