I think it is enough to add gcc to /etc/portage/package.keywords and emerge it. It will co-exist with your current version of gcc and you will be able to switch between them with gcc-config. At the end of the emerge it might or might not automatically switch to the new version, I do not know. I have one machine which has been fully compiled with gcc 3.4 series and I haven't had any problems (although I do not use it all that much). It's been out for quite a while since 3.4 series has been out and my guess would be it is stable for most things.
