So, dropping the Gentoo requirement (although still desired) is
there a hardened (linux distro) router out there for sale that
work for a small office environment?  I have too many projects, atm,
so I know I can build something, but was hoping for an off the shelf
Foss hardened router. (3) gigE ports with or without wifi is fine.
You can always build a Hardened Gentoo router yourself, this is
what I'm (slowly) doing now for my home; though it is an i3-based
system, not an embedded hardware (I really doubt that embedded
hardware will be able to handle 1 Gbps encrypted connections.)

Take a spare desktop system, strip / rebuild / reconfigure it as a single purpose system.
Lots of card slots and memory are very good to have for this system.
It works, but can be a pain space and time wise. ( Firewall / DHCP Server / Router ).
I have done this twice for relatives.

Disclaimer : Gentoo was not used for these systems.
( Asking elderly non-technical relatives to learn Portage ... is a Bad Idea. )
( And yes, I mean if you have to explain power button usage ...  )
