The datastores are part of the GeoTools library. The old oracle datastore sources are here: http://svn.osgeo.org/geotools/branches/2.5.x/modules/unsupported/oracle-spatial/ However I don't advise working on that one, since it's going to be replaced by Oracle NG in GeoServer 2.0 and it's no more maintained even today in 1.7.x.
