Looking into this, I've found the issue:

Seems like the up-to-date docs are available from https://build.geoserver.
org/geoserver/master/doc/en/user/
Not a long-term solution by any stretch of the imagination, but at least
they are available somewhere.
Possible solutions:
1. Modify docs.geoserver.org to support https, so it is able to proxy
the docs on the build server
2. Migrate docs.geoserver.org to a more modern architecture.
Unfortunately, neither of these are trivial, and I don't know of a good
interim solution.
