Hi,

although more a GeoExt than a GeoServer question, the answer is to use a 
WMSCapabilitiesLoader 
(http://geoext.org/lib/GeoExt/widgets/tree/WMSCapabilitiesLoader.html). Also 
see the example: http://dev.geoext.org/trunk/geoext/examples/wms-tree.html
